Washington native Chef David Nichols and local industry veteran Jonathan Fleming have teamed up to bring you Rider, a downtown Seattle restaurant celebrating two of the Pacific Northwest’s most defining characteristics: the forest and the ocean. Seattle was built on a foundation of logging and fishing, and at Rider, the bounty of the sea meets the transformative power of an open wood-fired grill. Diners can watch the action of the grill and open kitchen from Rider’s 90 caramel-hued seats and blue banquettes, or, for a more up-close view, from the 10-seat marble chef’s counter. Rider’s menus showcase sustainably-sourced and locally-caught seafood, meats from farms across the state, artisan cheeses provided by regional dairies, and seasonal Pacific Northwest vegetables from local farmers and sustainable foragers. Pair the meal with our expertly crafted cocktails, and savor the bounty of this wonderful region.

Enjoy one of Seattle’s best happy hours every evening at Rider, with special prices between 3 to 6 p.m., and again from 10 p.m. to midnight, on some of our kitchen’s most popular items. From the bar, specials include $4 beers, $3 tall boys and a rotating cocktail of the day for $8.

In true Seattle fashion, a key cornerstone of our hotel is MADE Coffee, our street-level café. The beans—a vibrant blend from Honduras, Brazil, and Colombia—are roasted in a vintage 1949 Balestra wood-fired roaster. With aromatic alderwood, a few simple gauges and decades of expertise, the time-tested machine imparts a bold, inspiring flavor with a slight smokiness to the MADE Coffee. In the shop, skilled baristas use an Athena Leva machine to ensure that the art of espresso is alive and well at Hotel Theodore. The Italian espresso-maker, with its intricate lever system and hand-hammered body, ensures that each cup is customized. Feeling caffeinated already?
